The soybean puree, which is by-product by producing soy milk, is widely used in Asian cuisine. This so called okara is rich in protein and fibre. It shall not be consumed raw. Okara stew. Ingredients: 500 g okara, 2 cups dashi-soup, 4 dry shiitake mushrooms, 1-2 carrots, ¼ leek, 2 tea spoon oil, 3 tea spoon soy sauce, 1 tea spoon sake. Cooking: Soften shiitake mushrooms in water for 30 min. Cut mushrooms, carrots and leek in thin slices. Boil dashi-soup with sake, sugar and soy sauce, add onion and mushrooms and let cook for a while. Heat oil in a frying pan and fry okara at strong heat. Add the soup. Ready. Okara rice fritters Ingredients: 1 cup okara, 1cup cooked brown rice, 1 table spoon poultry spice mixture, 1 cup spelt bread or spelt cracker, ½ cup chopped nuts, 1 tea spoon onion salt, 1 tea spoon garlic powder Cooking: Mix all ingredients and form small fritters. Fry them on both sides in oil. Serve with tomato or mushroom sauce. Okara dumpling soup Ingredients: 1 cup okara, ½ cup corn starch, 6 table spoon oil, ½ cup Rye bread crumbs, 1 tea spoon salt, 1 tea spoon paprika powder, 1 pressed garlic glove, boiling vegetable broth at your choice. Cooking: Mix all ingredients and form okara dumplings with a small spoon. Drop one dumpling after another in boiling broth. Cook for 5-10 minutes. Okara corn soup Ingredients: 2 average potatoes (cut in slices), 2 table spoon poultry spice mixture, 3 cups soy milk, 150 g corn, chopped celery, ½ green paprika, 1 average onion (chopped), ½ - 1 cup okara Cooking: Heat all ingredients in a pan and cook at middle heat until ready. To serve add parsley or leek. Okara oat flakes pancakes (for 8 pancakes) Ingredients: 1 cup okara, 2 cups fine oat flakes, 200 ml vegetable broth, 1 onion, carrots, leek, herb salt, pepper, 1-2 eggs. Cooking: Mix oat flakes with okara and vegetable broth and put aside for 10 minutes. Then add all ingredients and stir well. The dough shall not be too hard, so that you can form pancakes with wet hands. Heat oil and fry pancakes on both sides until golden-brown. House made Soy noodles Ingredients: 250 g soy flour, 100 okara, 80 ml water. Cooking: Mix flour with okara and add water, until you get kneadable consistency.
